Wow I am so behind on blogging...I have a lot of catching up to do. I will start with Jane's wedding shower which was at the beginning of August, I think-or was it July? Anyways it was so much fun to finally get together with the DG's-I have missed you all so much!

For those of you who asked...here is the recipe for Bean Salsa that I made-there are lots of recipes similar to this but I think this recipe is the best!
1 can black-eyed peas, drained
1 can corn, drained
2 large tomatoes, chopped and drained
1 bunch fresh cilantro, chopped (use only the leaves-about 15 stems worth)
6 green onions, chopped
1 pkg Good Seasons Italian Dressing mix
1/3 cup vinegar
1/2 cup oil
1 tbsp water
2 avocados, chopped (Or 3-4 in my case-I like an avocado chunk in every bite!)
Seasoning salt to taste
Combine first five ingredients. Combine dressing powder, vinegar, oil and water. Pour over bean mixture and let sit for at least 45 minutes. Add seasoning salt to taste.
Enjoy!

YUM!!! i love cowboy salsa! i need to try your recipe. i have one without italian seasoning, but heck, i love that stuff!! I need to try yours asap!
